Laboratory equipment was modified to simulate each of the commercial machines. Heat penetration data and biological tests were then made on a controlled basis. The test data was later confirmed by field data. The method of racking (supporting) pouches was found to be very critical in assuring commercial sterility of product in pouches. Also, the type of heating medium used and how it is applied in the sterilizer significantly affects productivity. “Proper“ confinement of pouches while processing can significantly improve assurance of commercial sterility and maximum productivity of the sterilizer.
