Light catalyzes the action of oxygen and sodium metabisulfite but will also initiate an autooxidation process in the absence of these two. Tryptophan does not react with sodium metabisulfite alone, oxygen must also be present. The rate of this reaction is greater than that between tryptophan and light or oxygen alone.
